Having a very dynamic lifestyle means keeping my eating habits healthy is a huge challenge. With an unpredictable and packed schedule, as well as a lot of time spent travelling or at least out of town, I would often leave home without breakfast and would then find myself snacking on processed food during work. That’s why I started coming up with meals you can prepare in a few seconds or even take out with you, and one of my favourites is this wonderful ‘instant’ chia pudding mix.
Why instant? Normally, chia seeds need to soak for hours before the texture becomes thick and creamy like a pudding, but with a tiny trick they are ready to eat in a minute. The only thing yu need to do is to grind the chia seeds into meal before mixing them with liquid.
Taste combinations are endless with this simple snack and you’re filling up on heaps of protein, fibre and omega-3 amino acids, making chia a favourite with health-enthusiasts, celebrities and the fitness crowd. My recipe is a basic one, but feel free to add extra ingredients such as cocoa powder, spices or dried fruits to your taste.
- 100g chia seeds
- 50g coconut sugar
- 1 teaspoon bourbon vanilla powder
- pinch of salt
- Grind chia seeds in a blender, then add the rest of the ingredients and mix well.
- Store the ingredients in an airtight jar. When ready to use, mix three spoons of the mix with 3/4 of a cup of homemade coconut milk or other plant milk of choice.
