Feel-good Superfood Raw Mars Bars

Just like any normal girl, I’m addicted to everything sweet – if it’s chocolatey and creamy too, there’s absolutely no way I could possibly resist it.

A few years back, though, my chocolate-a-day habit brought along first signs of health issues, which I now know, was a true blessing. Seeing my health drastically improve the moment I quit sugar, gave me the will-power to fight my sugar addiction and do a complete turn-around in my eating habits. I started experimenting with food, falling in love with my little artisanal creations and eventually started up my own cafe that provided alternatives for people with different dietary restrictions. 

But still, my sweet-tooth stuck around and every once in a while I treat it to something special – sugar-free of course. I love to indulge in vegan, raw, wholesome and healthy sweets that I hand-make at home. I try to use a variety of natural sweeteners (some of them are high in fructose, which in excess could be potentially more harmful than sugar) and love to give my creations a superfood kick.

Some of my favorite sweets are the ones you can keep in your freezer and unfreeze whenever you feel like something sweet. This is where my ‘feel-good’ raw Mars bars step in.

What makes the raw Mars bars ‘feel-good’?

These Mars bars are packed with nutrients and include a number of ingredients that could be qualified as a superfood. Also, they’re tiny aphrodisiac bombs, wink, wink. 

  • Maca – its health benefits are numerous, with maca being powerful at balancing hormones, meaning it can reduce symptoms of PMS and menopause and give our libido an oomph, as well as at boosting our energy levels and stamina. Maca can also help us fight depression and anxiety and improve our memory and learning ability. 
  • Raw cocoa – with its heaping amounts of antioxidants (around 20 times more than blueberries) it has amazing abilities to protect our bodies from oxidant stress, lowers cholesterol, fights heart disease and even cancer. But the best thing about cocoa is the fact it can improve our mood and help us deal with stress and depression. 
  • Virgin coconut oil – coconut oil should be a part of our diet on a daily basis. It provides extended protection against bacteria and viruses and helps us maintain a healthy body weight. 

 

Feel-good Raw Mars Bars

Chocolate Layer
  1. 2/3 cups pre-soaked cashews
  2. 1/4 cup of virgin coconut oil
  3. 1/4 cup maple syrup
  4. 2 spoons coconut milk
  5. 2 spoons of carob powder
  6. 2 spoons of raw cocoa powder
  7. 1 teaspoon of maca
  8. 1/4 teaspoon vanilla
  9. pinch of salt
Caramel Layer
  1. 2/3 cup of pre-soaked dates
  2. 1/4 cup of coconut oil
  3. 3 teaspoons of maple syrup
  4. pinch of vanilla
  5. pinch of salt
Chocolate
  1. 1 cup of cocoa butter
  2. 2/3 cup of raw cocoa powder
  3. 1/3 cup of maple syrup
For the chocolate layer
  1. Blend all the ingredients except coconut oil in a blender.
  2. Finally, add the coconut oil and blend again.
  3. Spread a thick layer on baking paper and place in freezer to solidify.
For the caramel layer
  1. Blend all the ingredients except coconut oil in a blender.
  2. Add the coconut oil and blend again.
  3. Spread on top of the chilled chocolate layer and cool again until you can cut it into bars.
  4. Once you have cut your bars, freeze them, so they're ready to coat in chocolate.
For the chocolate coating
  1. Melt the cocoa butter over a water bath and add cocoa powder.
  2. Mix until combined and then add the maple syrup.
  3. If you want your chocolate to be tempered (resistant to melting on your fingers, with a nice shine and snap), first bring your mixture to 46 degrees Celsius, then quickly cool it to 29 degrees Celsius and re-heat back to 32 degrees Celsius.
  4. Coat your bars in chocolate and chill.
